Ingredients
- 4 medium tomatoes, finely diced
- 2 medium cucumber, finely diced
- 2 spring onions, finely chopped
- 1 green pepper, finely diced
- ½ onion (purple), finely sliced
- 150g feta cheese, crumbled
- 4 tbsp olive oil
- Juice of ½ lemon
- 1 tsp salt
- 1 tbsp dried oregano
- Handful of English Parsley, roughly chopped
- ½ cup walnuts, crushed
Instructions
- In a large mixing bowl, combine tomatoes, cucumber, spring onions, purple onions and walnuts.
- In a small cup, combine the olive oil, lemon juice and salt. Mix well and pour this dressing in with the rest of the ingredients and toss well.
- Place the salad into a serving dish and add crumbled feta cheese and sprinkle over the dried oregano.
