shepherds salad

Ingredients

  • 4 medium tomatoes, finely diced
  • 2 medium cucumber, finely diced
  • 2 spring onions, finely chopped
  • 1 green pepper, finely diced
  • ½ onion (purple), finely sliced
  • 150g feta cheese, crumbled
  • 4 tbsp olive oil
  • Juice of ½ lemon
  • 1 tsp salt
  • 1 tbsp dried oregano
  • Handful of English Parsley, roughly chopped
  • ½ cup walnuts, crushed

Instructions

  • In a large mixing bowl, combine tomatoes, cucumber, spring onions, purple onions and walnuts.
  • In a small cup, combine the olive oil, lemon juice and salt. Mix well and pour this dressing in with the rest of the ingredients and toss well.
  • Place the salad into a serving dish and add crumbled feta cheese and sprinkle over the dried oregano.
