Serves: 4 – 6

Serve with rice and tomato-avocado salad.

Ingredients

Minced beef

  • 500 g minced beef
  • 1 big yellow onion, finely chopped
  • 2 tomatoes, finely chopped
  • 1 Tbsp tomato paste
  • Salt & pepper to taste
  • 2 Tbsp olive oil

Red Kidney Beans

  • 1 cup of red kidney beans, soaked overnight
  • 1 big yellow onion, finely chopped
  • 2 tomatoes, finely chopped
  • 150 g of pumpkin, cut in squares
  • 2-3 Tbsp of tomato paste
  • 1 vegetable or beef cube
  • 2 Tbsp olive oil

Instructions

Minced beef

  • Heat the olive oil and cook the onions till golden brown.
  • Add the beef and cook , mixing it very well in order to break the chunks of meat.
  • Add the tomatoes, tomato paste and season.
  • Cook for another 10 minutes

Red Kidney Beans

  • Heat the olive oil and cook the vegetables.
  • Add the soaked beans and the cube, cover all ingredients with water and cook in a pressure cooker for 25 to 35 minutes. The gravy has to be thick.
