Serves: 4 – 6

Ingredients

  • 1 beetroot, grated
  • ½ red cabbage, cut into thin slices
  • 1 carrot, grated
  • Handful of raisins
  • 2 Tbsp vinegar
  • Dill, chopped
  • 1 cup of chopped parsley
  • ¼ cup pumpkin seeds
  • ½ cup lemon juice
  • 1 tsp salt
  • ¼ cup olive oil

Instructions

  • Sprinkle vinegar and salt all over the sliced cabbage and squeeze the cabbage with your hands. Set aside for 15-20 minutes. This softens the cabbage and prevents bitterness
  • Wash and drain the cabbage and place it in a big bowl
  • Mix with all the ingredients. Taste and adjust the seasonings
