Serves: 4 – 6


  • 1 cup green lentils
  • 2 cups water
  • 1 medium onion, chopped finely
  • 1 tbsp. tomato puree
  • 2 Tbsp. olive oil
  • 1 Tbsp. flour
  • 1 tsp cumin
  • 1 Tbsp. rice, washed
  • 1 tsp salt
  • 1 Tbsp. Oregano
  • 5 cups hot water
  • 1 cup linguini, broken to 3-4 cm


  • Wash and drain the lentils
  • Place 2 cups of water into a small pan and boil the lentils in them for 7-10 minutes, Drain the lentils and set aside. This is done to remove the bitter taste of the lentils
  • Heat oil in a pan. Add the onions and cook till they are softened. Put the tomato puree and mix for 1-2 minutes. Make sure they are mashed well
  • Add the flour and stir it in well. Add the 5 cups of hot water, lentils and rice and cook
  • When it comes to a boil, reduce heat to medium and add salt and cumin
  • Add the linguini bits. Stir occasionally and cook till lentils and linguini are cooked
  • Garnish with Oregano
