Serves: 4 – 6


  • 2 cups of fine bulgur
  • 3 cups of hot water
  • 2-3 Tbsp tomato paste
  • 1 Tbsp pepper paste (optional)
  • ½ cup Olive oil
  • 1 bunch of green onion, finely chopped
  • 3 cups of parsley, chopped
  • 1 tsp red pepper flakes (optional)
  • ½ tsp cumin
  • ½ tsp black pepper
  • 2 tomatoes, chopped or sliced
  • 7-8 gherkins, cut roughly
  • Romaine lettuce leaves
  • ½ – 1 lemon juice
  • 1 tsp salt


  • Put bulgur in a big bowl and add the hot water. Cover with a lid and soak for 10-15 minutes
  • Open the lid and fluff the bulgur with a fork. Add the tomato paste, pepper paste, olive oil, salt and lemon juice and mix well. At this point taste to check if it needs more lemon juice. It should be a little sour
  • Add the rest of the ingredients except the lettuce leaves and the tomatoes.
  • Kisir is served and eaten with lettuce leaves and tomatoes. Don’t add the tomatoes in because it makes the kisir mushy
  • You can either serve it on a lettuce bed or wrap it in luttuce leaves with tomatoes on the side
