Ingredients – Ribs

  • 500 g pork ribs
  • 1/2 tsp salt
  • 1/2 tsp sugar
  • 2 Tbsp oyster sauce
  • 1 tsp sesame oil
  • ½ tsp bicarbonate of soda
  • 2 Tbsp rice flour
  • 2 Tbsp potato starch
  • 3 Tbsp water
  • 1 egg, beaten
  • Oil for deep frying
  • Chili padis, chopped (for garnish)
  • Fresh coriander, chopped (for garnish)

Ingredients – Sauce

  • 2 packets instant coffee
  • 1 Tbsp brown sugar
  • 1 Tbsp normal sugar
  • 1 Tbsp minced garlic
  • 2 Tbsp worcestershire sauce
  • 1 Tbsp rice wine (optional)
  • 1 Tbsp dark soy sauce
  • 3 Tbsp water

Instructions

  • Cut 500 g pork ribs into strips and add to a large bowl. Add salt, sugar, oyster sauce, sesame oil, bicarbonate of soda, rice flour, potato starch, water and egg. Mix well and let it marinate for one hour. Set aside.
  • Separately, for the coffee sauce, add instant coffee, brown sugar, sugar (adjust to taste), minced garlic, rice wine (optional), worcestershire sauce, dark soy sauce, and 3 Tbsp water to a large bowl. Mix well and set aside.
  • Heat sufficient oil in a wok, deep-fry pork ribs until golden brown. Drain and set aside.
  • Add coffee sauce mixture to a pan, over medium heat. Cook until it thickens.
  • Add pork ribs, toss and let sauce coat ribs evenly.
  • Garnish with chopped chili padis and fresh coriander.
