Serves: 6 – 8

Ingredients

  • 4 tbp ghee or clarified butter
  • 3 cups of rice soaked for about 30 min (preferably Basmati)
  • 2 onions sliced and fried in ghee till light brown
  • 2 tsp cumin seeds
  • 6 cups of water
  • 4 tsp sugar
  • 6 cloves – crushed
  • 4 cinnamon sticks
  • 8 black peppercorns
  • 6 cardamoms
  • 1 bay leaf
  • 3 tsp salt

Method

  • Take a deep container and add the ghee and sugar with a little rice
  • Fry this until the sugar has caramelised an turned brown – this is what gives the rice it’s color so be patient!
  • Once caramelised add the rest of the rice and water, salt and cook till fluffy and the grains are separated (about 15-20 min)
  • Serve hot with Dhansak
