Serves: 4 – 6

Ingredients

  • 4 Potatoes – Sliced and cut like chips
  • 4 Eggs
  • 2 small onions – Sliced
  • 3 pods of garlic finely chopped (optional)
  • Green chilli paste – about a tsp (can be replaced with a couple of chopped green chillies or leave it out if you don’t like spice)
  • Chilli flakes – about a tsp
  • Chopped coriander for garnishing

Method

  • Par boil the potatoes for faster cooking – not too soft as they need to stay firm
  • Fry onions till lightly browned
  • Add garlic, chillies and fry till you can smell the aroma of the garlic
  • Add the potatoes and continue to fry till completely cooked, add salt and chilli flakes
  • Finally break the eggs over the potatoes and cover until the eggs are cooked. If you like them runny then you’re done!
  • Garnish with chopped coriander
  • Tip! You could add bacon for more flavour or replace the potatoes with tomatoes, mince, any leftover vegetables
