Ingredients

  • 400 gm of rice flour (1)
  • 10 gm turmeric powder (2)
  • Chopped spring onion (3)
  • 600 ml beer/water (4)
  • 200 ml coconut milk (5)
  • 500g prawns (peeled and cleaned)
  • 300 gm thin slices pork
  • 2 large onion thin sliced
  • 200 gm bean sprouts

For the dipping sauce

  • 1 tbsp Chopped garlic
  • 1 tbsp lemon juice
  • 1 tbsp fish sauce
  • 2 tbsp sugar
  • Chopped chillies (optional) (6)

Method

  • Mix (1,2,3,4,5) together and stir until the batter mixed well
  • Steam bean sprouts- Fry onion, prawns and pork until cooked (about 5 minutes)
  • In a medium sized wok; pour in a big scoop of batter and quickly turn the wok around so the batter covers the whole surface
  • Add steamed bean sprouts, fried onions, prawns and pork on one side of the pancake
  • Flip the other side of the pancake to cover all the ingredients and remove from wok. (pancake will have half moon shape)

For the dipping sauce:

  • Mix all ingredients in (6) well together . Double the amount if needed
