Ingredients

  • Shrimp -100 grams
  • Squid -100 grams
  • White Fish (Tilapia) – 100 grams
  • Eggs – 2
  • Young coconuts – 2
  • Coconut milk – 250ml.
  • Thai red curry paste –about 2-3 tbsp
  • Lime leaves (sliced) –to season
  • Basil leaves – to season
  • Fish sauce – approx 2 tbsp
  • Palm sugar – approx 1-2 tbsp

Method

  • Stir fry the red curry paste in coconut milk at low heat until fragrant and then add the shrimp, squid, fish and coconut meat (removed from the two coconuts)
  • Increase the heat to medium and then add eggs and lime leaves; stir until I thickens
  • Season this by adding fish sauce and palm sugar, then add the basil leaves
  • Remove from heat and then put it in the coconut
  • Steam on high heat for 10 mins
  • Decorate with basil and chilli
