Serves: 4 – 6

Ingredients

  • 5 Eggs
  • 3 tbsp lime juice
  • 2 tbsp fish sauce
  • 1 tsp sugar
  • 2 tsp roasted chilli
  • 1 tbsp roasted rice
  • 2-3 shallots (sliced)
  • 1 spring onion (sliced)
  • 1 spiny coriander (Chopped)
  • Mint leaves for decoration

Method

  • Boil the eggs for 10 min with high heat then put in cold water and peel
  • Cut into half prepare in the plate.
  • Prepare the sauce by mix the lime juice, fish sauce, sugar and roasted chilli
  • Stir until the sugar dissolves
  • Add roasted rice and shallots, spring onion and spiny coriander to mix together.
  • Pour the sauce on the eggs
  • Garnish with mint leaf.
