Ingredients

  • 1kg boneless chicken (skinless boneless leg and thigh cut into medium size)
  • 3/4 tsp cumin seeds, toasted and ground
  • 3/4 tsp coriander seeds, toasted and ground
  • 2 cups unsweetened natural yogurt
  • 4 garlic cloves, pounded in a paste
  • 1 inch piece ginger, pounded in a paste
  • 2 Tbsp oil and a little more for basting
  • 1 tsp salt
  • 3 Tbsp lime juice
  • 1 tsp garam masala (Indian spices mixture)
  • 1/2 tsp black pepper
  • 1/2 tsp red chili / cayenne pepper, or as per taste

Instructions

  • Combine all ingredients to form the marinade
  • Marinade the chicken for as long as you can – overnight will be ideal
  • Set aside a bit of the marinade to be used to baste the chicken as it grills
  • Set the chicken pieces on the grill basting as you go. Grill on low to medium for 5 – 7 minutes turning as you go. Then turn the flame on high to get some charring on the meat.
  • Garnish with lime wedges
