Ingredients

  • 450g tilapia/halibut/mahi-mahi/snapper, or any other flaky white fish
  • ½ cup Japanese panko breadcrumbs
  • 1 tsp smoked paprika
  • ½ tsp cayenne pepper
  • Salt & Pepper
  • Tortillas

Ingredients (Mango Avocado Salsa)

  • 1 mango
  • 1 avocado
  • ½ jalapeno (or less)
  • Juice of 1 lime
  • Salt & Pepper

Slaw

  • 2 cups shredded cabbage
  • ½ red onion, very thinly sliced
  • 2 – 3 tbsp red wine vinegar

Lime Cilantro Crèma

  • ½ cup chopped cilantro (coriander)
  • 2-3 tbsp mayonnaise
  • ¼ cup sour cream
  • 1 tbsp lime juice
  • Zest of half a lime
  • 1 clove garlic, chopped
  • Salt

Instructions

  • Preheat the oven to 220°C. Slice fish into strips and season with salt & pepper. Mix panko, paprika and cayenne into a medium bowl. Roll fish in panko mixture and put on a baking sheet covered with parchment paper. Bake for 15 mins or until cooked through. Set aside
  • Combine all the salsa ingredients into a bowl. Mix well.
  • Combine all the slaw ingredients into another bowl. Mix well.
  • Combine all the ingredients into another bowl. Mix well.
  • Place a few pieces of fish on a tortilla, top with salsa, slaw and crema.
