Serves:  4

Ingredients

  • 4 portions of salmon (~ 125-200 g each)
  • 2 Tbsp coriander seeds
  • 2 Tbsp grapeseed oil or olive oil
  • 1 Tbsp lemon juice
  • 1 Tbsp black pepper cracked
  • 2 Tbsp coriander seeds
  • 2 Tbsp black mustard seeds
  • 1 Tbsp white sugar
  • 1 Tbsp sea salt

Instructions

Preheat oven to  180 C (356 F).

  • Dry heat the coriander and mustard seeds (no oil in pan) for a few mins. Let it cool then crush them coarsely.
  • Mix this together with the other spices (black pepper, salt and sugar) in a plate.
  • Brush your salmon pieces with the lemon juice and then with the oil.
  • Take each salmon piece and rub into the plate of mixed spices. Let the salmon rest for a few mins for the flavors to sit.
  • In a heated pan at medium heat, add oil and salmon pieces. Grill on each side for about
    2-3 mins. Be careful not to burn the spices.
  • Transfer the salmon to a baking pan and put inside the oven for around 5 mins. (I prefer the middle of the salmon to be just undercooked, taste is not dry).
  • Serve and enjoy!
