Serve: 4-6


  • 1/2 yellow melon
  • 1/4 watermelon
  • “Boursin” cheese fine herbs and garlic (instead you can also use Feta, which is also salty that goes well with sweet and fresh melon
  • Fresh mint leaves


  • Chop the melon and watermelon into 1/2 – 1/4 inch squares (there will be a lot of leftover which can be used for juice). This can be done in advance.
  • Place the melon and watermelon cubes alternately to create a checkered board
  • Place a few sprigs of mint on top and spread on top the crumbled “Boursin” or Feta cheese
  • Serve Cold

Note:  Alternative vegetarian side dish to nibble, low carb, great color presentation, can be prepared in advance
