Serves: 3-4


  • 500 g lady finger / okra
  • ½ tsp chili powder
  • Chat Masala (a spice mix)
  • ½ tsp coriander powder
  • 1 Tbsp. oil (olive, vegetable) / ghee
  • Salt to taste
  • Coriander leaves


  • Wash the lady finger and dry completely. If even one of them is wet, the dish will not turn out crispy and will be mushy and sticky
  • Cut the lady finger into small pieces. While cutting it, if you encounter any ladyfinger that is hard and difficult to cut through, discard it
  • In a pan heat the oil. Add the ladyfingers and cook on a low flame. Keep tossing the ladyfingers so that they are cooked consistently. This could take 10 minutes but keep checking
  • Once the ladyfingers are cooked, add the masala and mix
  • Serve hot decorated with coriander leaves
