Serves: 4 – 6

Ingredients

  • 900gr of skinless boneless chicken breast, cut into chunks
  • 1 cup freshly squeezed lemon juice
  • A small slice of lemon with the peel (optional)
  • 15 cloves of garlic, crushed
  • 6 Tbsp plain Greek yogurt
  • 6 Tbsp olive oil
  • 2 Tbsp red vinegar or apple cider vinegar
  • 1 to 2 tsp ground white pepper
  • 1/3 tsp ground ginger spice
  • ½ tsp ground thyme or ground oregano
  • 1/3 tsp paprika
  • 1 tsp salt (or to taste)
  • ½ to 1 tsp tomato paste

Instructions

  • Mix all ingredients with the chicken
  • Place in a container, cover, and let marinate in the fridge for at least 4 hours
  • Preheat oven 220C, grill position
  • Skewer the chicken right before grilling
  • Grill on medium heat for 12-18 min maximum
  • As soon it’s removed from grill, place the skewers on a warm plate, cover it with aluminium foil and let it rest for 8-10 min before serving.
