Serves: 4 – 6

Bandera Salsa (Mexican Flag Salsa) is used as an accompaniment to all dishes. Can be eaten by itself as well.


  • 2 large tomatoes, deseeded and chopped
  • 2 hot chilies (Jalapeno if possible), deseeded and chopped
  • 1 medium red onion, chopped
  • ½ bunch of fresh coriander, finely chopped
  • 1 green lime
  • Salt and Pepper


  • Mix first five ingredients together
  • Taste. Add salt and pepper to taste. It is always easier to add seasoning so start light on the salt
