Irene Lechevalier’s Costa Rican Cabbage Salad

Ingredients

  • ½ cabbage, chopped thin
  • 2 carrots, grated
  • ½ onion, chopped
  • 2 lemons, juice of
  • ¼ capsicum, chopped
  • 2 Tbsp white vinegar
  • 2 Tbsp chopped coriander
  • Salt and pepper, to taste

Instructions

  • Mix all ingredients together.
  • Serve in a bowl.
