Ingredients

  • 3 eggs, room temperature
  • ¼ cup brown sugar
  • ½ cup whipping cream
  • 1- 15 oz. can pure pumpkin puree
  • 1 tsp cinnamon*
  • ½ tsp ground ginger*
  • 1/8 tsp. ground cloves*
  • ¼ tsp salt
  • 8 inch pie crust (see pie crust recipe)

Instructions

Preheat oven to 190 C (375 F).

  • Whisk 3 eggs.
  • Add all ingredients, mixing by hand to prevent over-processing.
  • Pour into uncooked 8 inch pie crust.
  • Cover pie edges with foil.
  • Bake on lower rack of oven for 30 mins.
  • Remove foil.
  • Bake another 15 minutes.
  • Cool on wire rack.

* Note 1 ¾ tsp. of pumpkin pie spice (if you can find it) can be used as substitute all 3 of these spices.
