- 1.5kg pork ribs
- Salt & pepper to taste
- 1 tsp turmeric
- 1 tsp sweet paprika
- 1/2 tsp cayenne pepper
- 1 cup apple juice
- 1/2 cup fruit jam
- 2 tbsp honey
- 1/4 cup bbq sauce
- Chili flakes (optional)
- Season the ribs with salt, pepper, turmeric, paprika and cayenne and place in the pressure cooker with the apple juice. Close it and wait until it gets pressure. Once pressure, lower the fire and let it cook for 40 mins.
- Alternatively, if you don’t have a pressure cooker, you can wrap the ribs in aluminium foil and bake them at 180°C for 1hr30 mins. Then follow as below.
- For the glaze, mix the jam, honey, chilli flakes and BBQ sauce. When the ribs are ready, put them in an oven proof dish and with a brush spread the glaze. Put the ribs in the oven – grill option – until golden brown.
- Serve the ribs with the lime coriander rice and a watercress/red apple salad.
